


The GC-2 and GC-3 are high-performance pressure compartment cookers featuring a gas steam boiler, designed to meet the demands of commercial kitchens. These units are constructed from all-welded type 304 stainless steel with a #4 finish, ensuring both durability and easy cleaning. The doors are built with a removable aluminum plate inner liner, a full perimeter gasket seal, and a one-piece welded stainless steel outer shell. The wheel-and-screw closing mechanism ensures a secure and tight seal. The doors feature a clear opening of 10-1/4” x 26-3/8” (260 mm x 670 mm) and can open 180 degrees upon latch release for easy access. Each compartment operates at a maximum pressure of 6 psi (41 kPa) and includes universal pan supports. Optional sliding shelves are available to support two full-size (1/1 gastronorm) pans, providing versatile cooking options.
The control housing is constructed from #4 finish stainless steel and includes a full-access removable panel for ease of maintenance. Each compartment is independently controlled by an automatic timer with visible and audible signals. At the end of the cooking cycle, the controls automatically shut off, exhaust the incoming steam, drain the condensate from the compartment, and activate a continuous audible signal until manually turned off.
The cooker is mounted on a sturdy cabinet base with a full perimeter angle frame and reinforced counter and boiler mountings. The electric boiler features standard controls, including automatic water level control, a pressure gauge, water gauge glass, pressure control with secondary safety pressure control, air vent, and safety relief valve. For optimal safety and efficiency, thermostatically controlled cold water automatically condenses the exhausted steam before releasing it to the drain.
The cabinet is made from durable, #4 finish type 304 stainless steel, with hinged doors and 6” (152 mm) stainless steel legs fitted with adjustable flanged feet for secure mounting to the floor. A comprehensive water treatment system, automatic blowdown, CSD-1 boiler controls, electronic ignition, and a split water line come standard, ensuring top-tier performance and safety for every cook cycle.
