Electric Large Capacity Steamer, 2 Compartments, 36" Cabinet — 220V, 3PH

The EDA-2 and EDA-3 models feature both pressure and pressureless compartment cookers equipped with an electric steam boiler. These cookers are constructed from all-welded stainless steel, type 304, with a satin finish. The doors come with a removable inner liner made of aluminum plate, featuring a full perimeter gasket seal. The outer liner is a one-piece all-welded stainless steel design, complemented by a wheel-and-screw closing mechanism. The doors provide a clear opening of 10-1/4” x 26-3/8” and latch securely upon closing, opening at a 15° angle upon the release of the latch.

The lower compartment functions solely as a pressure cooker and operates at a maximum pressure of 6 psi (41 kPa). The upper compartment can serve as either a pressureless free-venting cooker or a pressure cooker, also operating at a maximum of 6 psi (41 kPa), depending on the operator’s selection. The control housing is made of stainless steel and features a full-access removable panel. Each compartment is equipped with independent automatic timer controls, accompanied by visual and audible signals.

In the lower compartment and the pressure mode of the upper compartment, the controls automatically shut off and exhaust incoming steam, drain condensate from the compartment, and emit a continuous signal until manually turned off. In the pressureless mode of the upper compartment, the controls include a mode selector switch and a steam flow cutoff that activates when the door is opened.

Both compartments come with universal pan supports, and each optional sliding shelf can accommodate two full-size steam pans.

The compartment cooker is mounted on a cabinet base featuring a full perimeter angle frame, reinforced counter, and boiler mountings. The electric boiler is equipped with standard controls that include a water treatment system, automatic water level control, pressure gauge, water gauge glass, primary pressure control with a secondary safety pressure control, air vent, safety relief valve, CSD-1 boiler controls, automatic boiler blowdown, and a split water line. A thermostatically controlled cold water system automatically converts exhausted steam into water before discharging it to the drain. The cabinet is made of all stainless steel with a #4 finish, featuring hinged doors and 6” (152 mm) stainless steel legs fitted with four adjustable flanged feet to secure it to the floor.
