The doors are designed with a removable inner liner of high-quality aluminum plate, featuring a comprehensive perimeter gasket seal for optimal temperature retention. Constructed from a single piece of welded stainless steel, the outer shell enhances structural integrity and incorporates an advanced wheel-and-screw closing mechanism. With a clear opening of 10-1/4” x 26-3/8” (260 mm x 670 mm), these doors not only latch securely upon closing but also provide a full 180-degree opening upon latch release. Operating under a maximum pressure of 6 psi (41 kPa), each compartment is equipped with universal pan supports, and the optional sliding shelves are capable of effortlessly holding two full-size (1/1 gastronorm) pans each.
The control housing, also crafted from #4 finish stainless steel, features a fully accessible removable panel that puts control at your fingertips. Each compartment can be independently managed by an intuitive automatic timer, complete with both visible and audible signals. At the conclusion of the cooking cycle, the controls intelligently shut off, expelling incoming steam, draining condensate, and emitting a continuous audible signal until you choose to turn it off.
The compartment cooker is securely mounted on a robust cabinet base featuring a full perimeter angle frame and reinforced counter and boiler mountings. The electric boiler is equipped with an array of standard controls, including automatic water level management, a reliable pressure gauge, a clear water gauge glass, primary and secondary safety pressure controls, an air vent, and a safety relief valve. This cutting-edge design automatically converts exhausted steam into water before expertly directing it to the drain. The entire cabinet is constructed from high-grade #4 finish type 304 stainless steel, featuring convenient hinged doors and sturdy 6” (152 mm) stainless steel legs equipped with 4 adjustable flanged feet for flawless floor mounting. Additionally, this complete system includes an innovative water treatment solution, automatic blowdown, CSD-1 boiler controls, and a split water line as standard features, setting a new benchmark for efficiency and reliability in your culinary operations.
