


The DCX-16 is constructed from satin-finish stainless steel, type 304, featuring a cooking chamber made of one-piece, all-welded 316 stainless steel. The doors include a removable inner stainless steel liner with a full perimeter gasket seal, an outer liner that is also one-piece and all-welded, and a positive lock and seal mechanism. The dimensions of the door opening are 14” x 26.5” (356 x 673 mm).
The steamer comes with removable stainless steel pan supports and a stainless steel drip trough connected to a drain to collect condensate when the door is opened. The control housing is made of stainless steel and features a full-access removable panel. Each cooking compartment is independently controlled by a 60-minute timer, a green ready pilot light, and a red cook pilot light. An audible signal sounds at the end of the cooking cycle. Steam flow to the cooking chamber is interrupted when the door is opened during cooking and resumes once the door is closed.
The convection steamer is mounted on a cabinet base that includes a full perimeter angle frame, a reinforced countertop, a pressure regulator, and a condensate drain assembly with operational controls. The exterior is entirely stainless steel, featuring hinged doors and 6” (152 mm) stainless steel legs with four adjustable flanged feet for securing the unit to the floor.
